Austin’s breakfast taco trucks have basically perfected the form. The tortillas are hand-rolled in the morning and griddled to order. The eggs are fluffy and folded, not overcooked. The chorizo is house-made, the bacon is crispy enough to crackle, and the migas come tossed with crispy tortilla strips, peppers, onions, and Monterey Jack. The salsas are made daily — charred tomatillo, smoked pepper, roasted habanero — and the foil wrap is non-negotiable.

Beyond tacos, Austin breakfast trucks have built out entire Texas morning menus. Kolaches stuffed with sausage, jalapeño, and cheese (a Czech-Texan tradition that crossed over from Central Texas bakeries). Biscuits and gravy made with pork-sage sausage. Pecan-stuffed French toast. Cold brew sourced from Austin roasters like Cuvee and Greater Goods. Smoked brisket breakfast tacos for the people who can’t decide between BBQ and breakfast. And on the weekends, you’ll find trucks doing full brunch service — chilaquiles, huevos rancheros, breakfast burritos, the works.
